Mom's Apple Pie


What to do with all the granny smith apples from our baby shower? Well, my mom came up with a great idea!! We used them to make apple pie! Mmmm..yummm
Filling:
1. Approx. 2 quarts of water
2. 1/4 cup of lemon juice
3. 6 lbs. of tart apples (granny smith) Approx. 6-8 of the large size ones.
4. 1 3/4 cup of sugar
5. 1/4 cup of flour
6. 1 1/2 tsp. cinnamon
7. 1/4 tsp. of nutmeg
Mix it in!
In a large bowl, mix the water with 2 tablespoonsfuls of lemon juice. Peel and pit apples. Cut into slices and let soak in water/lemon mix.
In the meantime, in a large pot, combine sugar, flour, cinnamon, nutmeg, and the remaining lemon juice. Drain the apples (throw away the lemon water), add to sugar mixture and stir gently. Let stand for 20 min. Then cook uncovered over medium heat, stirring often, until mixture begins to thicken (about 30 min.) Let cool. Pack in freezer containers, leaving 1/2 inch headspace; apply lids and freeze. Makes about 4 pints.
When ready to use, thaw out apple filling, pour over frozen pie crust, and bake at 375 degree for 30 min. uncovered. Make sure you wrap the edges of the pie crust with aluminum foil so it won't burn. Remove the aluminum foil towards the end of the 3o min. so it will turn brown to look better.
